Carbonic maceration

This is created through the process of Carbonic Maceration, by placing whole bunches of grapes in the deposit. After fermenting, the grapes are pressed and the fermentation continues with the must of the deposit. One of the secrets is the use of a small proportion of Viura (white), mixed with Tempranillo to make it as fruity a wine as possible.
